This is my absolute favorite Split Pea Soup recipe. It is thick & hearty and loaded with vegetables and, of course, split peas. I used both yellow and green split peas in my recipe.
Start with vegetable oil in the bottom of my favorite soup pot. I add the chopped onion, chopped carrots, and chopped celery with the leaves. The celery leaves add so much flavor. Add a pinch of salt. Cook until the onions are translucent or for a few minutes. Add minced garlic and cook another minute.
Everything else gets added. Add the chicken stock, water, split peas, thyme, chives, salt , and black pepper. Bring it to a boil, cover the pot, then turn the heat down to a slow simmer. Simmer it for 2 hours. Serve warm by itself for a light meal or along side your favorite sandwich or salad.
Split Pea Soup Recipe
Ingredients
- 2 TBSP Vegetable Oil
- 1 medium Onion – diced
- 3 Carrots – cut
- 3 Celery Stalks – cut – add celery leaves if you can
- 1 TBSP Garlic – minced
- 1/4 tsp Salt
- 6 cups Chicken Stock (48 oz) (3 lbs) (1.36kg)
- 1 cup Water
- 2 cups Split Peas (yellow & green mixed)
- 1/2 tsp dried Thyme
- 1/2 tsp dried Chives
- 1 tsp Salt
- 1/4 tsp Black Pepper or to taste
Instructions
- Add oil to bottom of soup pan
- Add onion, carrots, celery with leaves, and 1/4 tsp salt and sauté until onion translucent or a few minutes
- Add minced garlic and cook another minute
- Add chicken stock, water, split peas, thyme, chives, salt, and black pepper and stir
- Bring to a boil then cover and turn the heat down to a simmer
- Simmer slowly for 2 hours
- Serve warm and Enjoy!
