My pumpkin obsession can linger well into the winter and sometimes even resurface in the middle of the spring seemingly out of nowhere. I love simple recipes because I just don’t have the time to devote to complicated foods. The FOUR INGREDIENTS needed for this recipe might even be in your kitchen right now. If they’re not in your kitchen right now, I recommend keeping them on hand. You never know when that pumpkin craving might hit.
I pour a box of white cake mix into a bowl. I add a can of pureed pumpkin. Cinnamon and ground ginger are added for a little more flavor. The whole shebang gets a nice sir. The batter will be thicker than a cake mix, but not as thick as a cookie dough.
I like to use cupcake liners when I’m making muffins because they are so super easy. Of course, you could certainly use a cooking spray or butter to keep your muffins from sticking to the muffin tin. It’s all the same horse with a different jockey, now isn’t it? When you’re in your own kitchen, you can do as you please.
Now, just scoop the batter into your muffin tins. I usually fill each cup about 2/3 to 3/4 full. This gives the muffins some room to rise. As you can easily tell by my pictures, I am not a perfectionist about getting my muffins all the same size. The pumpkin muffins go into the oven at 350° F for roughly about 20 minutes. Of course, you will need to adjust the time according to your appliance. I knew my muffins were ready when the center was firm to the touch. A fork or knife inserted into the largest one should come out with no dough… only crumbs. Once they are out of the oven, you should let them cool… if your patience is stronger than mine.

Ingredients
- 1 box White Cake Mix
- 1 can (15 oz) Pumpkin
- 1 TBSP Cinnamon
- 1 tsp Ground Ginger
- Cupcake Liners or Cooking Spray
Instructions
- Preheat oven to 350 degrees F
- Prepare muffin tins with cupcake liners or cooking spray
- In a large bowl, stir together the white cake mix, pumpkin, cinnamon, and ginger until thoroughly combined.
- Spoon dough into prepared muffin tins. Fill about 2/3 to 3/4 full.
- Bake at 350 degrees for about 20 minutes or until center is no longer doughy.
- Allow to cool.
- Enjoy!
