Pumpkin Bread Recipe

I am all about “pumpkin everything” during the fall, but I have difficulty waiting for any official starts of autumn or signs of autumn. Maybe it is because my favorite season is almost always the next one. I am more excited about change than about any particular season so as soon as summer becomes established, I am looking for autumn. This Pumpkin Bread recipe is perfect to help me welcome autumn any time of year that I might be dreaming of autumn.

This recipe is so stinking simple. Preheat the oven to 350 degrees. Prepare a baking dish or pan with cooking spray or butter and flour. I used cooking spray on a baking dish.

In a large mixing bowl, I toss in the canned pumpkin, eggs, milk, and brown sugar. I use a hand mixer to mix it up really well. In a separate smaller bowl, I mix the all purpose flour, baking soda, baking powder, salt, cinnamon, ground cloves, ginger, and nutmeg. Once the dry ingredients are thoroughly mixed together, I pour the dry ingredients into the wet ingredients and use the hand mixer to mix it into a nice batter.​​​​​​​

The batter is poured into a prepared pan. I use a cooking spoon to smooth out the batter evenly. Pop the pan into the oven at 350 degrees for about 40 minutes or until a toothpick comes out clean. Let the pumpkin bread cool slightly then cut into squares. Serve while warm or pop it in the microwave for 15-20 seconds. I kept mine in the refrigerator for several days. It was a lovely breakfast this week.
