I have been wanting to experiment with fried pies for quite a while, but I did not anticipate them being as easy and delicious as they actually turned out. Fried Lemon Pies are made with two simple ingredients plus powdered sugar for the garnish which could easily be skipped and vegetable oil for the fryer which can be reused for other recipes after the pies come out. That’s just three or four ingredients! That’s my kind of recipe.

The crust is incredibly light and flaky. The powdered sugar and crust are very reminiscent of beignets from back home in south Louisiana. The lemon filling adds a bright citrus note that is too good. Honestly, this maybe my new favorite dessert, especially since it can be made with any flavor of filling my little heart can imagine.
First, I preheated my oil in the deep fryer to 320 degrees. I began with Ready-to-bake pie crusts that are sold in the refrigerator section of my grocery store near the canned biscuits. There are two 9-inch pie crusts in the box. I cut each pie crust into quarters as pictured below.
Next, I spooned a dollop of lemon pie filling onto each quarter. Carefully, I folded each quarter into a triangle and sealed the edges closed with my fingers. I tried using a fork, but I found that my fingers worked better for me. Once sealed, the little pie is dropped into the deep fryer.
I found it easiest to have the basket down first, dropping the pie over the basket and into the oil so it’s not lowering in the basket, but the basket is there to pull it out once it’s done. That’s just my preference. Each little pie cooked for about 2 minutes or until lightly golden brown. Check out the picture below.
