I am actually not a fan of Fried Chicken Gizzards, but my husband sure is. I prefer Fried Chicken Livers, myself, which, fortunately, can be easily cooked in batches between batches of fried chicken gizzards. However, my husband thinks that fried chicken gizzards are a true treat. This recipe has gotten his stamp of approval time and time again.

I start by preheating my mini deep fryer to 320° F. I line my serving platter with paper towels so I have my platter ready once the gizzards are done. The chicken gizzards get a good rinse in a colander. Next, I grab a gallon-sized zipper bag (like Ziploc, etc) and begin mixing my dry mix. The all-purpose flour, Tony Chachere’s seasoning, cayenne pepper, and yellow cornmeal all get added to the bag. The bag gets sealed and shaken until it is all mixed together well.
I like to add my chicken gizzards to the bag just a few at a time and shake each one well to coat before adding more. The gizzards are less likely to stick together that way.
The coated gizzards now get placed in the fryer basket in a single layer. I lower the basket into the fyer, and I fry them at 320° F for 6.5 minutes with the lid on. Your appliance may need more or less time so I recommend a test sample and adjust accordingly. Once fried, I lift the basket and let the oil drip out before tossing the fried gizzards onto a paper towel lined serving platter. The paper towels will soak up some of the excess oil.

Ingredients
- 2 cups All Purpose Flour
- 1/4 cup Tony Chachere's Cajun/Creole Seasoning
- 1 tsp Cayenne pepper
- 1/3 cup Yellow Cornmeal
- Chicken Gizzards (I had 1.6 lbs)
- Vegetable Oil according to your deep fryers instructions
Instructions
- Preheat your deep fryer to 320 degrees adjusting for your appliances needs as necessary.
- Rinse the gizzards.
- In a gallon zipper bag, add the flour, Tony's Chachere's seasoning, cayenne, and cornmeal.
- Seal the zipper bag and shake until thoroughly mixed.
- Add gizzards to the zipper bag individually allowing each one to get coated before adding more (this will alleviate sticking together as much).
- Add a layer of gizzards to your deep fryer's basket.
- Lower the basket with the gizzards into the oil
- Fry at 320 degrees for about 6.5 minutes adjusting the time for your appliance. I recommend a small test batch for your first time.
- Pour the fried gizzards onto a serving platter lined with paper towels to absorb excess oil.
