I have wanted to try a sausage casserole recipe in the slow cooker for a while. I have a huge slow cooker called a Ninja Cooking System. Since I am trying to feed two teenage boys, I need it. If you are not trying to feed teen boys, you might want to cut this recipe in half (or smaller). That should be easy enough to do.

If you’re dividing the recipe, you can use half as much. For the cream soups, either the celery or the mushroom can stand alone. Another option would be to place half of the ingredients in a freezer bag in the freezer for an easy dinner another day.

Sausage Casserole in the Slow Cooker
Ingredients
- Two Smoked Sausage Packs (I use smoked turkey sausage)
- 1 Bag of Potatoes O'Brien 33.6 oz
- 1 Bag Mixed Veggies 12 oz
- 1 Can Cream of Celery Soup 10.5 oz
- 1 Can Cream of Mushroom Soup 10.5 oz
- 2 Cups of Shredded Cheese (I use a Mexican blend because it's what I have)
Instructions
- Cut sausage into bite sized pieces. I can usually do this frozen. You can microwave to thaw if necessary.
- Layer the sausage pieces onto the bottom of your slow cooker.
- Layer the potatoes O'Brien on top.
- Layer the mixed veggies over the potatoes.
- Pour both cans of cream soups over the veggies and spread to cover.
- Cook on high for 3-4 hours or on low for 6-8 hours adjusting times for your appliance.
- Shortly before serving, add 1 cup of shredded cheese and stir to mix ingredients.
- Add another cup of cheese on top and allow to melt.
- Serve.
If you have a Ninja Cooking System, you can brown the sausage by using the stovetop function before slow cooking. I did not do that because many of my readers have other slow cookers, and I wanted to be certain that the casserole would be good without browning. It was delicious!
