As I was preparing a romantic meal for my husband and myself, I knew that I would need a delicious salad to make the meal complete. My husband is a dry salad kind of a guy, so I made his salad without the vinaigrette and added his favorite salad stuff along with the salad ingredients here. Since dry salads aren’t really popular, I decided to share the recipe for my salad.
I started by chopping my veggies. The Romana tomatoes, cucmber, and spinach all get a good chop. In a large salad bowl, I simply add the mozzarella cheese, chopped Romana tomatoes, chopped cucumber, and chopped fresh spinach. All of this yumminess was tossed until well mixed.
I used the mozzarella snacking cheese pictured above. This is not a sponsored post. I am just sharing because I found that they made things easier since I did not have to cut the cheese. Also, since each of these handy little packets is 1 oz, it was easy to know that 5 of these little packets is 5 oz of mozzarella cheese. Any fresh mozzarella will work equally as well in this recipe, though.
The dressing is a simple combination of balsamic vinegar, olive oil, minced garlic, fresh black pepper, and salt. I simply mixed in a dressing container then poured it over the tossed salad. I tossed the salad again to coat. Easy peasy.

Easy Cucumber Caprese Salad with Balsamic Vinaigrette
Ingredients
- 5 oz Fresh Mozzarella Cheese
- 4 Romana Tomatoes (chopped)
- 1 Cucumber (chopped)
- 1 cup Fresh Spinach (chopped)
- For the Balsamic Vinaigrette:
- 1/2 cup Aged Balsamic Vinegar
- 1/4 cup Olive Oil
- 1/4 tsp Minced Garlic
- 1/4 tsp Salt
- Fresh Black Pepper to taste
Instructions
- Chop tomatoes, cucumber, and spinach.
- Add tomatoes, cucumber, spinach and mozzarella to a large salad bowl.
- Toss to mix.
- Make the dressing by adding balsamic vinegar, olive oil, garlic, salt, and pepper to a dressing bottle.
- Shake dressing to combine well immediately before adding to salad. If it sits for a time, the oil and vinegar will separate and reshaking will be needed.
- Pour dressing over the salad and toss to coat the salad in the dressing.
- You may chose not to use all the dressing.
- Serve and enjoy!
