Chicken Rotel Dip #Recipe Perfect Appetizer or Party Food

Recommended Cooking Tools

Slow Cooker ( I use a Ninja Cooking System, but any good slow cooker will work)

Can Opener (if your Rotel tomatoes don’t have a pull top)

This is a simple slow cooker “dump” recipe because you can toss (or dump) everything into the slow cooker and forget about it until shortly before you’re ready to eat.  With only three simple ingredients, layering is important.  The chicken breasts should go into the slow cooker first.  This allows the chicken to be closest to the heat to guarantee that they are cooked thoroughly.  The canned Rotel tomatoes and cream cheese can be placed on top of the chicken breasts without worrying too much about placement.

Once the ingredients are properly layered into the slow cooker, you can either cook it on high for three to four hours or low for six to eight hours.  It is important that you know your appliance since some slow cookers will cook much faster while other slow cookers will cook much slower.

Gourmet Food Clubs

Once your dip is thoroughly cooked, I simply use a wooden spoon to break apart or shred the chicken.  If you’re in a hurry, a hand beater can be used instead, but be careful with the splashing.  Molten Rotel and cream cheese can be mighty hot.  Serve with tortilla chips, corn chips, potato chips, crackers, pita bread, french bread, or get creative.
