Almond Milk Fudge Pops

Few foods say summer to me like fudge pops.  My entire childhood comes rushing through my mind with the first taste of these almond milk fudge pops.  The nostalgia is overwhelming.  I almost always double this recipe!

My entire life, I have had a love/hate relationship with dairy.  I’m not actually allergic, but my life is better if I keep dairy to a minimum.  I use normal semi-sweet chocolate chips and a tablespoon of butter.  The butter can be omitted.  I have forgotten it once or twice.  While I have never actually tried the recipe with a vegan chocolate, I imagine that it would probably work.  If you try it, let me know how it turns out.

I simply add all the ingredients to a medium sized sauce pan with the exception of the butter which gets added last.  I cook the whole shebang on medium heat while stirring very frequently.  This cooks like a custard or pudding on the stove.  You want to allow the mixture to thicken to a gravy-like thickness.  You can stop once it covers the back of a spoon well.

Pull the mixture off of the heat and add the butter.  Stir until the butter is melted and thoroughly combined then pour the mixture into your favorite freezer pop molds.  Allow them to freeze completely… overnight usually does the trick.  Then enjoy them with friends!

Voila!  Yummy fudge pops with little dairy.  You can add sliced strawberry, other fruits, sprinkles, coconut, chopped nuts, crushed cookies (like Oreos), or anything else your imagination might dream up to make them even more decadent.
